Add half the oil to the cooking pot and set to sauté on med-high.
Add the onion and cook until they start to get soft, about 4 minutes.Add the red pepper and cook 3-5 minutes or until onions start to caramelize. Transfer to a plate.
Add the remaining oil to the pot and let it get hot. Add the
mushrooms and cook until liquid is almost evaporated, stirring occasionally. Season with salt and pepper.
Add the peppers and onions back to the pot along with tomatoes,
broth, garlic powder, paprika, and thyme, stir to mix well. Bring to a
boil, cover, reduce heat to med-low and let simmer 20 minutes.
