Hillbilly Fish Fry Seasoning for Air Fryer

Yields1 Serving

1 cup cornmeal (fine or medium grind)
 ½ cup all-purpose flour
2 tbsp paprika (smoked paprika for extra flavor)
 1 tbsp garlic powder
 1 tbsp onion powder
 1 tbsp dried thyme
 1 tbsp dried oregano
1 tsp cayenne pepper (adjust for spice level)
1 tsp black pepper (freshly ground)
1 tsp salt (or to taste)
½ tsp celery seed (optional, for extra depth)
Cooking spray or a light coating of oil (for air frying)
1

In a large bowl, combine all the dry ingredients (cornmeal, flour, paprika, garlic powder, onion powder, thyme, oregano, cayenne, black pepper, salt, and celery seed). Mix well until evenly distributed.

2

Store the seasoning mix in an airtight container or jar for up to 3 months.

How to Use the Seasoning for Air Fryer Fish Fry:
3

Prep the Fish: Pat your fish fillets (catfish, tilapia, or any white fish) dry with paper towels.

4

Dredge: Dip each fillet in buttermilk, beaten eggs, or a light coating of oil, then coat generously with the seasoning mix. Press the mixture onto the fish to ensure it sticks.

5

Air Fry: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray or brush with oil to prevent sticking.

6

Place the coated fish fillets in a single layer in the air fryer basket (avoid overcrowding). Lightly spray the top of the fish with cooking spray or brush with oil to help it crisp up.

7

Air fry for 10-12 minutes, flipping halfway through, until the fish is golden brown and crispy. Cooking time may vary depending on the thickness of the fillets.

8

Serve: Remove the fish from the air fryer and let it rest for a minute. Serve with hushpuppies, coleslaw, and tartar sauce for a complete hillbilly fish fry experience.
