In a bowl, combine coconut milk, honey, ginger, mustard, fish sauce, sesame oil, and sriracha. Divide the marinade into two portions. Refrigerate half and use the other half to coat the pork strips. Marinate the pork at room temperature for 15-30 minutes.

Thread the marinated pork strips onto wooden skewers (soaked in water beforehand), piercing the meat twice to form a gentle wave shape.
Cook the Skewers:
Lightly spray the basket of an air fryer with nonstick cooking spray. Arrange the skewers in a single layer and lightly spray them as well. Cook at 375°F (190°C) for 6 minutes, flipping halfway through, until the pork is golden and cooked through.
Garnish and Serve:
Sprinkle skewers with chopped peanuts and green onions, if desired. Serve with the reserved marinade, extra sriracha, and peanut ramen noodles, if you like.
