CARROT OAT MUFFINS

 2 fl oz sog wholemeal flour
 150 g (5oz) plain flour
 2 fl oz sog oats, plus extra to garnish
 75 g (3oz) golden caster sugar Pinch bicarbonate of soda
 1 tsp baking powder
 ½ tsp ground cinnamon
 3 carrots, grated
 2 large eggs
 75 ml (3fl oz) milk
 75 g (3oz) naturel,
 50 g (2oz) butter, diced
 unsweetened yoghurt
YOU WILL NEED :
 6 silicone muffin moulds

Heat the air fryer to 160°C/300°F. Mix the flours, oats, sugar, bicarb, baking powder, cinnamon and a pinch of salt.

Mix the carrots, eggs, milk and yoghurt. Add to the dry mixture with the butter and stir well. Spoon the mixture into the cases, sprinkle over the additional oats and bake for 20 mins until springy to touch.
