 180 ml rice flour
 7 ml paprika
 5 ml garlic powder
 5 ml onion powder
 2 ml salt
 2 ml pepper
 250 ml buttermilk
 head of cauliflower, cut into small 2-inch (5 cm) florets (approx. 10 cups/2.5 L)
 60 ml hot sauce (e.g., Frank’s RedHot)
 30 ml canola oil
 15 ml liquid honey
 Creamy blue cheese dip (see recipe)
 Optional: carrot and celery sticks

Prepare the Batter:
In a large bowl, whisk together the rice flour, paprika, garlic powder, onion powder, salt, and pepper. Add the buttermilk and mix until smooth. Toss the cauliflower florets in the batter, ensuring they are well-coated

Cook the Cauliflower:
Spray the air fryer basket with non-stick cooking spray. Arrange half of the coated cauliflower in a single layer in the basket and spray lightly with more cooking spray. Air fry at 375°F (190°C) for 12–15 minutes, shaking the basket halfway through, until the cauliflower is tender and golden. Repeat with the remaining florets.

Coat in Sauce:
In a large bowl, whisk together the hot sauce, canola oil, and honey. Add the cooked cauliflower and gently toss to coat evenly.

Serve:
Plate the Buffalo cauliflower bites and serve with creamy blue cheese dip and, if desired, carrot and celery sticks.
