Auntie Anne’s Pretzels

Yields1 Serving
  tsp active dry yeast (1 1/2 packets)
 2 tbsp brown sugar
 1 tsp salt
 1 cup bread flour
 3 cups all-purpose flour
 2 cups warm water
 2 tbsp baking soda
 Coarse salt (to taste)
 4 tbsp melted butter

Dissolve yeast in warm water. Add sugar, salt, and flour. Knead until smooth and elastic.

Let the dough rise for 30 minutes.

Prepare a baking soda bath by mixing 2 cups warm water with 2 tbsp baking soda.

Shape the dough into pretzels, dip in the soda bath, and place on a greased baking sheet.

Let rise again, then bake at 450°F for 10 minutes or until golden.

Brush with melted butter and sprinkle with coarse salt or cinnamon sugar.
