Lahmadjoun (Armenian Pizza)

Dough Ingredients:
 1.25 l (5 cups) all-purpose flour
 1 packet dry yeast
 10 ml (2 tsp) salt
 60 ml (1/4 cup) vegetable oil
 375 ml (1 1/2 cups) warm water
Meat Filling Ingredients:
 1 kg (2 lbs) ground beef or lamb (not too fatty)
 1 bunch parsley, finely chopped
 1 onion, finely chopped
 2 garlic cloves, crushed
 10 ml (2 tsp) salt
 2 ml (1/2 tsp) pepper
 2 ml (1/2 tsp) cayenne pepper
 1 ml (1/4 tsp) allspice
 5 ml (1 tsp) paprika
 60 ml (1/4 cup) tomato paste (optional)
 1 can (28 oz) whole or diced tomatoes, with juice
 2 limes, juiced (optional)

Dough: Dissolve the yeast in warm water as per package instructions. Combine with flour, salt, and oil. Knead until smooth. Let rise for 1-2 hours.

Filling: Mix all filling ingredients in a bowl.

Divide the dough into 36-40 balls. Roll each into a thin circle (16.5 cm or 6.5 inches).

Spread the meat filling on the dough circles. Bake at 260°C (500°F) for 6-8 minutes until golden.

Cool on a rack and serve warm with salad or grilled eggplant.
